My mama used to make this for us and I remember I was able to eat full bowl of this delicious salad/dip. I dont know where she got the recipe from, but I like to keep it on my menu, its a simple crowd pleaser and great way to get even orthodox veggie haters to eat & enjoy vegetables.
makes 2 cups
1/2 c celeriac
juice from 1 lemon
1-2 garlic cloves
salt & pepper
1-2 tbsp mayo
Process all together in food processor, till you get texture that you like. Transfer to air-tide container and keep refrigerated for at least an hour, so the taste has time to open. After an hour stir well andadjust the taste to your liking (salt, pepper, lemon).
I like to serve it during cocktail hour with socca or chips but it makes really good pairing with red meat too (a side for ribeye, topping on burgers ...)
